This winter, Le Bristol Paris has the immense honor of hosting the first-ever Dom Pérignon’s dining room. Together, Eric Frechon, triple-Michelin-starred Chef at Le Bristol Paris, and Dom Pérignon’s Cellar Master, Vincent Chaperon, are bringing to life a virtuosic vision designed for two to six guests to savor meticulously crafted pairings of Dom Pérignon’s best-in-class millesimes and the very height of French gastronomy through a private aperitif and dining experience.
A bespoke ‘bulle,’ or bubble, has been specially conceived for the experiential journey, divided into two sections — an immersive bar and an exclusive dining room. Inhabiting the center of the hotel’s courtyard garden, the two avant-garde spaces are enhanced in a sensational trompe l’oeil décor wherein one-way mirrors preserve the privacy of participants.
The journey begins in the private bar, where exceptional cuvées normally only offered by the bottle are served by the glass, accompanied by a tantalizing selection of small bites.
A brief interlude and a shift of scenery place guests around the table in the dining room for the presentation of six magnificent courses featuring caviar de Sologne paired with Dom Pérignon Vintage 2013 and pan-seared wild turbot with black truffle paired with the remarkable Dom Pérignon Vintage 2004 Plénitude 2 cuvée.

Le Bar by Dom Pérignon is open in the Palace Garden from Tuesday to Saturday from 6.00 pm with reservation (upon availability).
